Flash Freezing Bell Peppers for the winter

1-IMG_4364I’ve harvested quite a few peppers this year. My husband has feasted heavily on the baby bells. Fortunately, there was several left to put up along with the big bell peppers.
Flash freezing and vacuum packing is my favorite chosen method for storing peppers.

Flash freezing is quite simple.
2-IMG_4392I wash the peppers, hull and de-seed them and chop them in to small pieces.
3-IMG_4383I spread the pepper pieces on a tray and put them in the freezer.
*I use my refrigerator freezer. I don’t have a cookie sheet small enough to fit in it, so I cut cardboard the width of it and then cover the cardboard with wax paper (or freezer paper sometimes).
4-IMG_4403It usually takes about a half hour for the peppers to freeze.
I write a date on the vacuum bags. I take the frozen pepper pieces out of the freezer and put them  in the vacuum bags. Seal the bags and put them in freezer to use at a later date.

I look forward to using these peppers in the wintertime in stir fries, soups, meat-loafs and oodles of other recipes.

  1. I do the same thing with our peppers, including the hot peppers/jalapenos! I mix up the different colors in a single bag for stir fry dishes and other dishes where you typically want multiple colors of the peppers too. Have you ever had purple bell peppers? They are my favorite! They have deep purple skin but are green inside and taste just like the green bell peppers. 🙂 I wasn’t able to find any to plant this year though and hadn’t saved seeds from the last time I had some. Hopefully next year I can get my hands on some more, and remember to save the seeds!

      There’s not much that’s prettier than a bouquet of peppers and cheerful too. I like the ease of freezing peppers. They keep so well.
      I’ve not ever seen a purple pepper. They sound delicious. Yum! 🙂

  2. I’m a sale sleuth. I buy all kinds of fruits of and vegetables in season and freeze them. I’m picking up 3 flats of blueberries in the morning. Can’t wait for those winter mornings and blueberry muffins.

      Awesome. Hitting a sale, buying fresh and freezing therm for winter is a wonderful idea.
      Oh boy, I see many delicious treats for this winter at your home. Fresh baked blueberry muffins sounds so Yummy and the wonderful baking aroma ahhhh delightful! 🙂
