Chicken Vegetable Soup

It got down in the low 30°s yesterday. A perfect day for chicken vegetable soup. A soup cooked in a slow cooker all day long. A warm welcome when one enters the door, cold and tired, at the end of a long day.
I don’t have a recipe for my slow cooker chicken soup. I boil the chicken on the stove first. I put the chicken and it’s broth in the slow cooker. I add whatever vegetables I have on hand: frozen, fresh or canned. I turn it on and go on about my day.

*I feel obligated to note that I rinse the canned vegetables to hopefully help reduce the salt even though we by low salt or no salt canned goods.
I put the frozen onions and bell peppers in a colander and ran hot water of them for a minute, to help thaw them, before adding them to the slow cooker.

Unfortunately, I couldn’t make any corn bread to go along with the soup because for the first time in my 4 decades of married life, I don’t have a solitary egg in the house. My husband cooked up the last of the eggs for our breakfast Monday and we haven’t had a chance to go to the grocery store this week.
All was not lost, we have oyster crackers and they’re mighty tasty in the soup.

  1. I love a hearty chicken and veg soup, EC. One of my favourite soups is Lentil but for some reason I’ve not cooked it for years. I need to address that. More recently I made a pea and mint soup and that was delicious. I made enough to freeze but confess it is not quite the same

      Lentil soup is delicious, but oh my pea and mint soup sounds like a lovely fall treat. I agree, frozen soup isn’t the same as fresh. I go for long bouts and don’t make soup. For me it’s a seasonal thing. The colder it gets, the soupier my cravings. 😀

      Woe, the teens are dreadful if you have to go out for any length of time. Bless your heart.
      I really like Cream of Broccoli Soup. (I’ve never attempted to make it though, but I might now though.) There was a restaurant in a hotel,where we used to go on vacation, that made a delicious thick and creamy broccoli soup. We would even make our arrival day for Friday just so we could enjoy their broccoli soup. Unfortunately, hurricanes hit the area and the restaurant is no longer there. I suspect the owners moved to higher ground. But it’s a nice memory. Thanks for reminding me of it.

  2. An slow cooker food! The soup must have turned out heavenly. (Since it doesn’t get as cold in Bangalore, hot tea suffices to warm up our hands and bellies! 😉 A good soup now and then might not be a bad idea, though.)

        Slow cookers are a blessing, to be sure. I’ve not drank hot tea, but it sounds so comforting and delicious. 🙂
