Peaches & Cream Corn – Harvest & Freezing

0-20160807_093914We had a busy Sunday morning. We went to the garden and harvested about 4 dozen ears of Peaches & Cream Sweet corn.

Working together, it didn’t take long to have the corn shucked, cleaned, blanched, cooled, packaged and in the freezer. We have a dozen bags of corn put up and ready for future meals.

Bruschetta & Shrimp

5-8-2016We made Bruschetta using fresh picked green onions on Mother’s Day. I fixed a small plate with fresh picked chard, shrimp, bruschetta and cocktail sauce.
Cocktail sauce and shrimp is really good.
Bruschetta and shrimp is really good.
Bruschetta and cocktail sauce is not as tasty, the cocktail sauce overpowered the bruschetta. It was okay, it’s just not something I plan to serve together on one plate again. Oh well, You live, you cook, you learn and carry on.
It was a pretty plate and a nice little snack for back porch sitting and enjoying the day.

Flash Freezing Bell Peppers for the winter

1-IMG_4364I’ve harvested quite a few peppers this year. My husband has feasted heavily on the baby bells. Fortunately, there was several left to put up along with the big bell peppers.
Flash freezing and vacuum packing is my favorite chosen method for storing peppers.

Flash freezing is quite simple.
2-IMG_4392I wash the peppers, hull and de-seed them and chop them in to small pieces.
3-IMG_4383I spread the pepper pieces on a tray and put them in the freezer.
*I use my refrigerator freezer. I don’t have a cookie sheet small enough to fit in it, so I cut cardboard the width of it and then cover the cardboard with wax paper (or freezer paper sometimes).
4-IMG_4403It usually takes about a half hour for the peppers to freeze.
I write a date on the vacuum bags. I take the frozen pepper pieces out of the freezer and put them  in the vacuum bags. Seal the bags and put them in freezer to use at a later date.

I look forward to using these peppers in the wintertime in stir fries, soups, meat-loafs and oodles of other recipes.

First Tomato 2015

IMG_3214I harvested our first tomato of the year. It was beautiful and delicious. IMG_3300This will probably be the last pretty one we get because the deer are pretty well keeping the redding tomatoes eaten. This tomato was hidden on the vine behind a some green ones.

The resident doe has recently had a fawn. She’s got a huge appetite now that she’s nursing.
My husband saw the fawn the other day he said it was as tiny as Shelibean. Aw, it sounded so cute.  Hopefully, it’ll come out when I’m outside and I can get a photo of it to share on my blog.

Caterpillar Burger

We rarely have hotdogs and we had some leftover from the weekend. I decided to cook a hotdog for my lunch. I didn’t have any hotdog buns though. I had only hamburger buns. I wasn’t in the mood to use loaf bread for my hotdog bun and I almost decided not to cook one…
Then I remembered how we used to have quite a bit of fun making hotdog-burgers when I was a little girl. It was such a fun idea and the memories of those days of yore brought a smile to my heart.

*I changed the name of my hotdog-burger to ‘Caterpillar Burger’. Back in 2012, my blogging buddy Tina suggested it and that’s what I’ve called it ever since. Thanks Tina! 🙂

Here’s a set of pictures I took, as I fixed the hotdog,
to share with you, in case you may want to do this too.Down the length of the hotdog, carefully
cut slits a bit more than halfway through.
Place the hotdog in a pan of water
on the stove at med high heat.
Heat water to a full rolling boil.Allow it to boil for a few minutes until
the hotdog bends as far as it seems it will.
Carefully remove hotdog from pan of water
and allow to drain on a paper towel or cloth. If need be, Carefully, bend the hotdog into a circle.
Place hotdog on a hamburger bun. You can enjoy it like this or go to the next step.
Place a slice of cheese on top of the hotdog. You can enjoy it like this or go to the next step.
Place bun on a microwavable safe dish,
microwave for a few seconds until the
cheese is just melted over the hotdog. Allow the hotdog to set until
it’s cool enough to safely eat.

Add chili, mustard or ketchup or
your favorite relish and enjoy.

Tah-dah! And there you have it folks a ‘Caterpillar Burger’.
