Earlier in the Summer, I got a bit of a craving for Chicken Lo Mein. Usually we go to a local restaurant for Lo Mein and other tasty foods, but it was too late in the evening for going much of anywhere. It occurred to me that most everything can be made at home now-a-days. Perhaps there was a simple recipe for lo mein on the internet that I might be able to make. It became quite an obsession with me over the next few days. I finally decided on a recipe on the Pillsbury website ‘Chicken Lo Mein’.
I’ve made this recipe a few times this Summer. I’ve adjusted ingredients for us and it turns out quite well. It’s filling and We really like it.
Here’s my adjustments:
– I leave out the water chestnuts. We tried them with the first batch, but it really didn’t add anything to the meal.
– I use fresh garlic and fresh ginger.
– I’ve used frozen vegetables only once. There wasn’t hardly enough in the bag for 2 servings, so I had to add some other veggies with them. Since that first time, I use fresh vegetables only. It takes a bit longer for prep time, but it’s so worth it.
– The recipe doesn’t call for cauliflower, but it had cauliflower in the pretty photo on the recipe page, so I added it to it. Cauliflower tastes great in this lo mein.
– We use a ‘less sodium’ soy sauce.
– I use linguini noodles. I cook them almost done before adding them in with the ingredients in the pan.
We prefer linguini noodles over the angel hair pasta for this recipe. To us, angel hair pasta is more for spaghetti or alfredo and the like.

My husband has been reminicing about the homemade apple pies that I used to make. He talked enough to get me wanting an apple pie. I bought a bag of apples and got out my ‘Old Timey Apple Pie’ Recipe. I was particurilarly excited about making a pie because I finally figured out how to make the lattice pie crust and wanted to try it out. It wasn’t as hard to do as I once thought. I used to make the solid pie crust top.
We had a busy Sunday morning. We went to the garden and harvested about 4 dozen ears of Peaches & Cream Sweet corn.
The asparagus beans have done well so far this year growing/running up the decorative corn and the twine. However, next year we plan to plant the asparagus beans in a row of their own and make a trellis for them to run on. It’s awfully crowded in the corn rows now that both are maturing and fully leafed out.
Our decorative corn stalks are getting their-ears-on. We’re hoping the deer doesn’t decide to sample the ears before they mature and we can harvest some.
We’ve been getting only a few regular green beans
My 50+ bell pepper plants are beginning to put on fruit. I figure by the end of the month we’ll be covered in colorful bell peppers. I’ll be freezing them for soups, stir fries and other tasty dishes. If most of the plants put on fruit, I’ll probably be giving oodles of them away.
I made a stacked tuna salad and it was so pretty I thought I’d share a photo of it.
The walnut tree is loaded heavy this year. My husband had to cut some of the heavily ladened limbs off. They were hanging low over the driveway and could do damage to our vehicles when they dropped walnuts or if the wind caused them to break.
Just in case the walnut tree is predicting some bad winter weather,
