Chicken Vegetable Soup

It got down in the low 30°s yesterday. A perfect day for chicken vegetable soup. A soup cooked in a slow cooker all day long. A warm welcome when one enters the door, cold and tired, at the end of a long day.
I don’t have a recipe for my slow cooker chicken soup. I boil the chicken on the stove first. I put the chicken and it’s broth in the slow cooker. I add whatever vegetables I have on hand: frozen, fresh or canned. I turn it on and go on about my day.

*I feel obligated to note that I rinse the canned vegetables to hopefully help reduce the salt even though we by low salt or no salt canned goods.
I put the frozen onions and bell peppers in a colander and ran hot water of them for a minute, to help thaw them, before adding them to the slow cooker.

Unfortunately, I couldn’t make any corn bread to go along with the soup because for the first time in my 4 decades of married life, I don’t have a solitary egg in the house. My husband cooked up the last of the eggs for our breakfast Monday and we haven’t had a chance to go to the grocery store this week.
All was not lost, we have oyster crackers and they’re mighty tasty in the soup.

What’s you favorite recipe for winter days?

I wish you all a warm and pleasant weekend.

Chicken Cordon Bleu

The other day, I was watching an old black and white movie and a woman in the movie said that she had made ‘Chicken Cordon Bleu’.
I’d heard of cordon bleu entrées several times over the years, but usually in reference to a restaurant menu. I don’t know why it never occurred to me that it could be made at home. I wondered just how hard it would be to make.
I went surfing around and came upon a really good recipe and decided to give it a go. I’m surprised at how easy the ‘Homemade Chicken Cordon Bleu’ recipe is to make.

This is one of the few recipes that I made real close to the published recipe.
I used:
Panko bread crumbs
Deli Black Forest Ham
Swiss Cheese slices
I didn’t use toothpicks, the chicken stayed rolled up quite nicely without them.
I checked the internal temperature of the chicken and made sure it was over 165°. I’m real careful about that.

I served the Chicken Cordon Bleu with baked squash and a baked yukon gold potato.
It was a hearty meal and very tasty. My husband sure enjoyed it too.I condsider my attempt at making Chicken Cordon Bleu a success. I’m always happy to add another tasty recipe to our menu.

Have you tried any recipes that were inspired by a mention on a movie or tv show?
Was it a success?

Wishing you a successful rest of the week.

Snowflake Crackers sort of

I bought these crackers because in the picture they look like snowflakes and even say ‘Snowflake’ on the box.
The cracker brand is my favorite brand.
The quality and taste are there…
However I’m Feeling a bit disillusioned…

How about you, ever bought a food because it looked a bit special and then found that, while it tastes good, it’s a bit lacking in looks as advertised on the packaging?

Baked Donuts

The other night I decided to give my
new Wilton Donut cake pan a try.
I used a regular yellow box cake mix.We really enjoyed these.
We preferred them without frosting
and ate most of them that way.

Although the ones with frosting was a mighty sweet treat too.

It took 13 minutes for them to bake each time. Since I had only one pan it took over 2 hours to bake up all the batter.
As soon as I got near my pc, I ordered a couple more 6 cavity Wilton Donut pans to speed up the process next time.
I thought about getting some silicone pans, but I’ve never used them. I stuck with the trusted metal ones.

I’m curious, have you ever used silicone baking pans?
How did they do? Did you like them?

Here’s wishing you all a week of tasty treats and smiles.

Pumpkin CheeseCake

p1080062-0The stores have started placing shelves in the middle-isles with seasonal baking supplies. Generally, we don’t pay much attention, but the other day a Libby’s Pumpkin Cheesecake mix caught our eye. We decided that since we like pumpkin pie and we also like cheesecake that we may like this mix as well.p1080039We were wrong. Well, not wrong, just disappointed that it tasted too much like a regular old pumpkin pie with a small bit of a tangy taste of cream cheese.

We’re glad we tried it even though we had to throw 3/4 of it away. We won’t be buying it again.
From now on we’ll take our pumpkin pie straight up with maybe a hit of whip cream.

Have a great rest of the week!

Old Timey Apple Pie

applepie-1My husband has been reminicing about the homemade apple pies that I used to make. He talked enough to get me wanting an apple pie. I bought a bag of apples and got out my ‘Old Timey Apple Pie’ Recipe. I was particurilarly excited about making a pie because I finally figured out how to make the lattice pie crust and wanted to try it out. It wasn’t as hard to do as I once thought. I used to make the solid pie crust top.

We enjoyed the pie… However, if I ever make it again, I will have to adjust the recipe because it was way too sweet. That’s the thing about the old timey recipes, some are sugar-heavy, this recipe calls for 1 1/2 cups.

All-in-all, it was a pretty decent pie. We enjoyed it over the course of a few days. I enjoyed making the pie and plan to make another one someday with adjustments to the recipe, or maybe another recipe all together.

I hope you all have an enjoyable week.

Chocolate Ice Cream Bread

chocolatebread1Well, here it is ‘Chocolate Ice Cream Bread’.
It tastes like a cross between a brownie and a chocolate cake.
chocolatebread2I’m happy that I’ve tried all 3 flavors in the Neapolitan ice cream.
It’s an easy recipe and bakes up beautifully.

Wishing you all fun with creative cooking.

*I used a small batter made like my basic ‘Boiled Custard Bread’ recipe.
Use melted ice cream instead of boiled custard.
Add flour a little at a time to the melted ice cream until the batter is a creamy consistency.
If you get the batter too thick, thin it with a little bit of water.

Strawberry Ice Cream Bread

P1050425Well, it was bound to happen, that’s right, I made ‘Strawberry Ice Cream Bread’. One can only bake around with vanilla ice cream or custard for so long before the other flavors become too tempting not to try too.

I had been playing with the idea to use strawberry or chocolate ice cream to make some ice cream bread. I mentioned it to my supportive & wonderful husband and he went out and brought home a gallon of neopolitan ice cream.

P1050416I made a small loaf of strawberry ice cream bread. I’m so amazed how this bread can rise so lovely and come out of the pan without sticking. The strawberry bread has great texture and wonderful taste. I love the pretty color too.

This was such fun to try. Now next up is chocolate. I hope it does as well. I’ll let you know.

Happy creating!

Easy Basil & Tomato Cream Cheese Spread

P1040896I had a couple packs of herbed cheeses. We really enjoyed the tomato and basil cheese. We haven’t tried the other yet. I liked the tomato and basil cheese so much that I decided to make some.

I went in search of a recipe. The recipes were either too overdone with oodles of ingredients or made too large amounts for my small family. As usual I ended up making up my own recipe. The recipes gave me a good idea what ingredients to use. I decided on using just 3 ingredients.

My husband really enjoyed my homemade spread. It’s so easy to make. I plan to use this simple recipe as a spring board and add some other ingredients with it to make some other spreads and dips.

——————
Basil & Tomato Cream Cheese Spread

8 oz. softened cream cheese
2/3 cup chopped fresh tomatoes or chopped sun dried tomatoes
1/4 cup chopped fresh basil (or 2 tbsp dried basil)
1/4 tsp Mrs. Dash garlic & herb seasoning

In a medium size bowl, use a fork to thoroughly mix all 4 ingredients together.
Refrigerate for a few hours or overnight so the cream cheese can soak up the flavors.

Serve with crackers or chips

Peaches & Cream Corn – Harvest & Freezing

0-20160807_093914We had a busy Sunday morning. We went to the garden and harvested about 4 dozen ears of Peaches & Cream Sweet corn.

Working together, it didn’t take long to have the corn shucked, cleaned, blanched, cooled, packaged and in the freezer. We have a dozen bags of corn put up and ready for future meals.

Here’s Wishing for all your harvests to be bountiful!02freezingcorn
